Vegan Whoopie Pies Valentines Day Healthy Recipe – Mind Over Munch



Valentine’s Day is just around the corner so I thought today would be the perfect time to share my vegan red velvet whoopie pies. For this recipe you will need sifted oat flour, coconut sugar, sweetener of choice, coconut oil, an egg or for vegan a flax egg which is just flaxseed and water, cocoa powder, beet puree which is just how we’re going to get that red color oh natural, almond milk, baking powder, baking soda, salt, and vanilla.


To make your flax egg start by grinding up your flaxseed in a spice or coffee grinder. Measure out one tablespoon of the ground flax, you want to make sure you measure after their ground, with three tablespoons of water and then just transferred to the fridge for about 20 minutes. Boom! Flax egg. I also haven’t tried personally but I have read on the interweb you can also do this with chia seeds. Start by combining your dry ingredients in a large mixing bowl and whisk well to combine. Next, in your stand mixer with a whisk attachment you’re going to combine your wet ingredients.

A hand mixer will of course also do the trick. Beat on medium speed until combined and then slowly start to integrate your dry ingredients alternating with your milk in batches. Once you have a nice dough allow it to sit for about 10 minutes to thicken up. Now here’s the deal with the red in this red velvet. I have made red velvet cupcakes with beets a million times.

With this recipe I think because of the flax egg being so dark they don’t get quite as red. If you want these really red I suggest using a real egg, using a little bit less cocoa powder, and maybe adding a few drops of food coloring. If you want them natural and don’t care about them being red just go for delicious chocolate whoopie pies that are lower in fat thanks to the beets.

Line a baking sheet with parchment and spray with cooking spray. Use a small cookie scoop to scoop your batter onto the baking sheet. Bake in an oven preheated 350 degrees Fahrenheit for about 8 to 10 minutes until firm to the touch. Allow to cool. They should be a firm but fluffy and cakie consistency.

Yum! Now for the filling. We are going to be using my coconut whipped cream so check out that episode if you haven’t already but I am also adding in some additional powdered sugar into this recipe to make it a little bit more firm so that it can sit between the two whoopee pies. Spread your coconut whipped cream onto the flat side of one of your pies and then place the other pie half on top. So cute and so delicious and now there’s nothing left to do but devour.
